Hailey Volkov

My name is Hailey Volkov, I am currently a high school junior, and I was diagnosed with Ulcerative Colitis 4 years ago. A month after being diagnosed, it was decided for me to try going on the SCD diet. I was on the diet for about a year until I began to slowly reintroduce foods into my diet.

 

I was on the diet in 2016 when dietary restrictions were still fairly new, and grocery stores did not have many options. I had to purchase specialized cookbooks, but I struggled to find recipes that I actually enjoyed.

So now I have decided to create a website on which I have complied all my favorite recipes to make someone else's life with IBD a little easier.
