Chicken + Fruit Salad


Baked chicken thigh salad with your favorite citrous fruits such as oranges, lemons, and grapefruits. Easy to make in the oven and will refrigerate up to 5 days. 



  • 2 Pounds Boneless Chicken Thighs

  • 5 Tbsps Olive Oil

  • 1 Cup Orange Juice 

  •  5 Tbsps Honey

  • 1 Tsp Salt

  • Pepper

  • 3 Tbsps Fresh Rosemary 

Fruit Salad

  • 1 Grapefruit

  • 1 Lime

  • 1 Orange

  • 1 Lemon

  • 10 Figs 

  • 3 Tbsps Grinded Pistachios

  • 1 Tbsp Cilantro


  1. Blend all the marinade ingredients and put thighs in the marinade. Keep it in refrigerator for 30-45 mins.

  2. Preheat oven to 365°F 

  3. Transfer the thighs with marinate in dripping pan covered with wax paper

  4. Insert into the oven and roast for 25-30 min.

  5. Peel off the skin from lime 

  6. In 15 mins add figs and lime skin to the dish and continue to roast

  7. Peel off the skin from grapefruit and cut on the pieces.

  8. Peal off the skin from orange and cut on the pieces

  9. Cut the lime on the pieces.

  10. Put on the top of the roasted meat pieces of chicken
