Winter Citrus Salad

A perfect salad for any meal of the day. Quick and easy with ingredients you can easily find at home! It's a perfect mix of your favorite citrusy fruits and you can even substitute plain avocado with the sour avocado recipe! 

Ingredients

For The Salad 

  • 2 Blood Oranges 

  • 2 Navel Oranges 

  • 2 Tangerines 

  • 2 Grapefruits 

  • 1 Avocado 

  • 2 Cups Baby Arugula 

  • 1/4 Cup Toasted Shelled Pistachios 

  • 1 Tsp Maldon Salt 

  • 1 Tsp Espelette Pepper 

For The Vinaigrette 

  • Juice of 1 Navel Orange 

  • Juice of 1 Blood Orange 

  • Juice of 1 Grapefruit 

  • 1/2 Cup Champagne Vinegar

  • 3/4 Cup Olive Oil 

  • 1 Tbsp Honey 

  • 1 Tsp Kosher Salt  

Steps

  1. Slice off peel and pith of citrus, and cut fruit into 1/4" thick wheels 

  2. Arrange fruit slices on a platter making sure non are overlapping and scatter small avocado slices on top

  3. Mix all vinaigrette ingredients together and generously spoon over the citrus and avocado 

  4. Top the salad off with the pistachios, sea salt, and pepper

  5. Scatter arugula around on top
