Eggplant Pizzas


Miss pizza? Here's a perfect substitute that fits all SCD requirements and still has that great taste! Very easy ingredients that are easy to get at your local grocery store, and will be ready in a little over 30 minutes! You can personalize it by adding some meat, extra cheese, mushrooms, anything that could be a pizza topping. 


  • 2 Medium-Large Eggplants, Sliced in 3/4" Thick Rounds

  • 1 Tbsp Olive Oil

  • 1 1/4 Cup Tomato Sauce

  • ½ Cup Shredded Parmesan Cheese

  • Salt


  1. Slice eggplants in ¾” thick rounds

  2. Place on oiled baking sheet in single layer

  3. Brash with olive oil

  4. Sprinkle with salt

  5. Reheat oven to 425 and roasted eggplants for 25 min

  6. Put ¼ cup sauce at the bottom of the baking dish and spread around

  7. Put the baked eggplants in the baking dish

  8. Put rest of sauce on the top of eggplants and sprinkle with parmesan cheese

  9. Put in oven and bake for  10-15 min
