Vegetable Ragu

A mix of all your favorite vegetables cooked with spices to bring out all the best flavors in them. Goes perfectly as a side dish to any main course meal or can serve as a dish on its own. This dish is up to you and you can personalize it with any vegetables of your choice. 


  • 1 Large Zucchini; Cubed 

  • 1 Large Yellow Squash; Cubed 

  • 1 Small Red Bell Pepper; Seeded and Diced 

  • 1 Orange Bell Pepper; Seeded and Diced

  • 1 Yellow Bell Pepper; Seeded and Diced 

  • 1 Small Italian Eggplant; Cubed 

  • 1 Medium Sweet Onion; Diced

  • 8 Oz White Button Mushroom; Sliced 

  • 2 Garlic Cloves; Minced 

  • 1 Tbsp Olive Oil 

  • 1 Tsp Salt 

  • 1/2 Tsp Black Pepper 


  1. In a large skillet on medium high heat combine olive oil, and cook until the onions are turn slightly gold 

  2. Add in all the vegetables to the onions and cook for about 30 minutes. Then add in the garlic, salt, and pepper; stir together 

  3. Cover, reduce heat to medium low, and cook for another 15 minutes 

  4. May serve hot or cold
