A delicious side dish to any main course meal. You can dip it into any sauce of your choice or follow the recipe for the green tahini sauce to enhance the flavor of the cauliflower even more.

Ingredients

  • 1 Jumbo Cauliflower

  • 3 Tbsp Unsalted Butter (Room Temperature)

  • 2 Tbsp Olive Oil

  • Flaked Sea Salt

  • Green Tahini Sauce (Optional)

Steps

  1. Trim the leaves around the cauliflower with scissors so that around 2 inches of the actual cauliflower head is exposed

  2. Fill a pan (that is large enough to fit the cauliflower) three-quarters full of salted water and bring to boil

  3. Once the water has boiled, lower in the cauliflower with the exposed head facing down and cook for 6 minutes

  4. Then use a slotted spoon to transfer the cauliflower into a colander with the exposed head down and cool for 10 minutes

  5. Preheat the oven to 375°F

  6. Mix the butter and oil

  7. Place the cauliflower on a medium baking sheet with the head facing upwards and spread the butter-oil mix all over the cauliflower and sprinkle with flaked sea salt

  8. Place the cauliflower in the oven and roast for 1 1/2 hours
