Dating all the way back to the 15th century, rassolnik is traditional Russian soup made with pickled cucumbers, and pearl barely. Since the SCD diet does not allow barely, I have modified the recipe to exclude it since there isn't a substitute that fits SCD guidelines. 


  • Prepared Chicken Broth 

  • 1 Finely Chopped Onion 

  • 1 Shredded Carrot 

  • 2 Tsp Tomato Sauce 

  • 2-3 Pickles 

  • 2-3 Tsp Pickle Juice 

  • Salt 

  • Pepper


  1. In a fry pan add olive oil and bring to medium high heat

  2. Add in chopped in onions 

  3. Add in carrots 

  4. Add in tomato sauce and mix 

  5. Cut pickles into thin slices and add in with the onions, carrots, and tomato sauce; cook for 5 minutes

  6. Pour chicken broth into the tomato mixture and bring to boil 

  7. Bring heat down to medium high and add in 2-3 tsp pickle juice and salt and pepper to taste

  8. Cook for another 15 minutes
