Rassolnik
Dating all the way back to the 15th century, rassolnik is traditional Russian soup made with pickled cucumbers, and pearl barely. Since the SCD diet does not allow barely, I have modified the recipe to exclude it since there isn't a substitute that fits SCD guidelines.
Ingredients

Prepared Chicken Broth

1 Finely Chopped Onion

1 Shredded Carrot

2 Tsp Tomato Sauce

2-3 Pickles

2-3 Tsp Pickle Juice

Salt

Pepper
Steps

In a fry pan add olive oil and bring to medium high heat

Add in chopped in onions

Add in carrots
-
Add in tomato sauce and mix

Cut pickles into thin slices and add in with the onions, carrots, and tomato sauce; cook for 5 minutes

Pour chicken broth into the tomato mixture and bring to boil

Bring heat down to medium high and add in 2-3 tsp pickle juice and salt and pepper to taste

Cook for another 15 minutes
