Chicken Schnitzel

One of Germany's signature dishes, this chicken schnitzel mimics the exact taste of the original schnitzel recipe but still accommodating all SCD restrictions. It can go perfectly with a side of any salad of your choice and works as both a lunch or dinner entree. 

Ingredients

  •  2 Chicken Breasts 

  • 1 Cup Almond Flour 

  • 1 Cup Parmesan Cheese 

  • 3 Eggs 

  • Salt 

  • Pepper 

  • 2 Tbsp Olive Oil 

Steps

  1. Cut the chicken breasts in half to make 4 thin pieces of chicken 

  2. Using a meat mallet, pound the 4 chicken breasts on both sides until they are about an inch thick

  3. Salt and pepper both sides of all the pieces of chicken 

  4. In a bowl mix the almond flour and parmesan cheese 

  5. In a separate beat the eggs and add in a pinch of salt 

  6. Dip each piece of chicken into the egg wash and then into the almond flour mixture 

  7. Add to a skillet and cook the chicken for 3-5 minutes on each side or until it is golden brown
